A Dave Omelet - A Dave Day

I woke up this morning and the thermometer read a whopping 9 degrees. I made coffee, let the cat out, he seems to enjoy this weather, and decided to scrap any plans for outside work. I grabbed a quick shower, read the paper over two cups of coffee and 3 smokes and decided to make everyone breakfast.

Bacon is cooking now, I've chopped up some Black Forrest ham, onions, green peppers and jalapenos. I bought some excellent sharp cheddar the other day that I am grating up now, the pepper jack is next. Someone gave me a new omelet pan for Christmas, so I am going to try it out, though I prefer to make one in the cast iron pan.

Once the omelet is done, I'll put some salsa on top, plate it up with the bacon and some fried potatoes and feed everyone in front of the fire in the living room (for those that don't know, the Two Story Double Wide has 6 fireplaces).

The forecast is calling for us to remain with freezing temps for the next 3 days and snow on Sunday.

I have a feeling I will be doing a lot of cooking over the long weekend.
